X-Ray Me by Felicitas Horstschafer (illustrated by Johannes Vogt)

This book may be in a board book format, but I love how it shows what you find under your skin and muscles. It’s basic enough that young readers will enjoy looking at the photos and talking about basic anatomy, but detailed enough to lead into more questions and explanations. I also love that it’s interactive and gives you things to try and answer on each page (“Take a big breath in. Can you feel how your lungs get bigger? Now blow out. What happens?”)
